He made a special dessert for his friends called Lamington. It was lucious chocoalte cake iwth coconut on it. The legend says that Lord Lamington was planning a party and he made the chocolate cake for his guests. No one knows exactly why he added the coconut topping but it may have been to ckeep is hands cleaner while he prepared it. Or he may have had cocunut in his pantry and didn't want to waste it. But the Aussies love it and look forward to this day every year.m The latest version of this cake has strawberry filling and is smotherd iwth whipped cream.
