What is Lamington Cake and why it"s my favorite

We had a special occasion at our house last Saturday and our beautiful daughter-in-law, Elzabeth, brought a yummy dessert called a Lamington Cake. I'd mentioned to her that I had read about its origin.
According to the information available, Lord Lamington, the governor of Queensland, raved about this treat after his trip to Australia around 1900.
One version I read stated that  Governor Lamington was so taken with this dessert that he tired baking it himself. At first, according to rumor, he tried making the cake himself, but wasn't happy with it's appearance. Then he decided to add the coconut coating. He was very pleased with the ene result. This cake also has a raspberry filling. If you ever see this in a bakery, or offered anywhere, I'd encourage you to try it.I bet you 'll love it.
Elizabeth is such a gifted cook! She can create anything perfectly on the first try! I can't imagine doing that. Anything I do, needs at least one practice effort. My husband and I think that Elizabeth is such a gifted cook that she could finance her future medical career through her culinary talents.

Sunday thoughts from Winston Churchill and me

In my humble opinion, Winston Churchill was a great stateman. Not only that, but he was the perfect leader for the times in which he lived.  During WWll, England did not need someone who held wishy-washy tenets. Instead, they needed a bulldog; someone who "Never gave up. Never surrendered, and never gave in."

With Winston's sentiments in mind, how important is your atttude? Remember, your attitude determines the way you perceive everything? Are  you someone who is generally happy, or someone who is never satisfied? if you are a pessimist, that negative thought process affects everyone around you. It's likely o make you cross and cranky. Do you like to associate with cranky, dissatisfied people? I bet not.

I hope you're enjoying the weekend and that you're inspired to make positive things happen every day.

Have you ever wondered about this?

Good morning, everyone,  have you ever thought about this? Everyojne has a challenge of some sort. Maybe  you have a physical impairment, like I do. Maybe you have a mental disability of some sort. Or perhaps you need a major attitude adjustment because  you're rarely pleased about anything. Thje attitude issue could be because you're a perfectionist. My dad was so he was not easily pleased. There are also many people who are always complaining about one thing or another. In my humble opinion, no one has everything they want so you make the best of the talents you have and you can choose to be grateful for them. Keep in mind if you are constantly complaining, it doesn't only affect you. Everyone around you will feel the same way so you'll become a clan of grumpy folks. Is that what you want?

How do you remedy this problem? You might make a list of things you are pleased about because it will help you focus on posiitive things. You could also surround yourself with those you support  you and your goals. You don't have goals? Set some and write them down. Read the list each day. Plan how you can accomplish each goal. I bet before long you 'll start acheiving things and building a path toward your dreams. Do you feel better already?

How do you turn your setback into a comeback?

We  all have times in our lives when things go wrong. You're dreaming of success and things are moving toward that, but something unexpected occurs and you're hopes are dashed. What happens next? Do you give up on your goal? I didn't. Here's my advice to you.

During my childhood, my singular passion was to become an equestrian champion. It’s not a particularly unique goal, but my situation was different than most because I was born with a handicap that made walking a challenge. It was a huge blessing to have parents who instilled the idea that I could do anything if I persevered. That meant I couldn’t moan over how many times I fell off when I was learning to jump. After six years, I started jumping in competitions.

After I’d been jumping for a few years, Daddy bought me a beautiful black Thoroughbred horse named Fleet Nancy, so we could compete in the big shows. Her nickname was Peach.  Peach’s only job was to excel at jumping, and she did. She showed it was fun for her by hopping up and down, doing small bucks called crow hops.

“Daddy, can we go to the show at the Riding Club in Weston? I heard the course is tricky because it’s hilly. Can we practice a couple of days before the show, to make sure we’re familiar with all of the jumps?”

“Good idea, honey. We’ll go there on Friday before the show.”

Our practice jumps helped me feel comfortable with the rolling terrain. Peach didn’t mind that the course wasn’t perfectly flat like most were.

On the morning of the show, Peach and I were practicing before our class. Everything went smoothly until we approached the last jump, the in and out. It’s two jumps with one stride in between. I thought Peach was ready to leave the ground at exactly the right time, but instead, she slid into the first part of the jump and I fell off. If you’re looking for the biggest embarrassment ever, this was it. I imagined every set of eyes in town staring at me when there was no rock to hide behind. And that’s not all. My amazing, perfect Peach galloped off the field at breakneck speed while the announcer yelled, “Loose horse!” over the loudspeaker. Peach ran off whenever she’d been naughty.

Naturally, anyone who didn’t know what happened felt compelled to check it out. I brushed myself off as Daddy walked onto the field. “Are you okay, sweetie?”

“Yes, but everyone was watching us.”

Daddy kissed the scrape on my cheek and wiped the dirt off with his clean hankie. “We’ll get some ice for it. Don’t let the fall bother you. When it matters, you and Peach will shine.”

Someone led Peach over to us. Daddy put me back on and we headed for the in and out again. I whispered, “Peach, that wasn’t nice. We’d better buckle down and do it right this time.” My legs trembled like they always did after I fell off, but we managed to take the in and out well. I patted Peach’s neck and tried to put the incident behind us.

***

“Honey, your class is next. Peach has rested since this morning. Be confident. Ride her like you always do. Then you’ll be hard to beat.”

Daddy kissed me for luck and we trotted onto the field. I gave Peach the canter signal and we galloped toward the first jump. Perfect, I thought. Peach and I took every jump in stride. When we finished, she crow hopped all over the field. I kissed her neck. My legs shook again because I was excited. “Now we’ll wait and see, Peach. We did our best.”

Daddy clapped and whistled from the side of the field. When Peach and I went over, he kissed me and said, “I don’t think anyone can top that.”

We waited for the winning numbers. Finally, the announcement came over the loudspeaker. “First place, number 91, Fleet Nancy, ridden by Deanie Humphrys.”

I kissed Peach’s soft brown nose and trotted her onto the field past the judge. The ringmaster pinned the bright blue ribbon on her bridle. We won every class that day and the Open Hunter Championship. It was incredible. It showed that even when your day doesn’t start out right, you can still change the outcome. When you have a setback, turn it into a comeback. When your biggest desire is to become a champion, you learn to be unstoppable.

A Scene From "Charlie the Horse"

Charlie is a young horse with a big dream. But there are obstacles blocking his path to success. What does Charlie do? He asks a famous retired racehorse for advice.  Charlie asks General Quick what he should do if he isn't in the mood for racing. The elder horse gave Charlie some helpful counsel. After that, Charlie wondered if he should give General Quick a professor's hat like the ones he's seen in pictures. Charlie told the General he'd seen funny-looking hats  and  General Quick said they were called "Mortar boards."

"Why would someone want to wear a board on their head?" Charlie asked.

See if Charlie's big dream comes true. You can purchase his book in paperback, on Kindle, or audio here;

Thursday's thoughts from Albert Einstein, Suzy Kassem, Ralph Waldo Emerson, Winston Churchill

“When you feel like quitting, think about why you started.” – Unknown

“Stay away from negative people. They have a problem for every solution.” – Albert Einstein

“Doubt kills more dreams than failure ever will.” – Suzy Kassem

When I was learning to jump horses, I'd get frutrated and ask my dad why I fell off so many times. He'd remind me that I'd learn how to stay on because I'd remember what happened that caused the fall and not do it again. My favorite quote about failure is this one by Winston Churchill.

“Success is stumbling from failure to failure with no loss of enthusiasm.”
― Winston S. Churchill

“Do not follow where the path may lead. Go instead where there is no path and leave a trail.” – Ralph Waldo Emerson
